Cacio e Pepe Ramen

Ingredients

  • Salt
  • Black pepper, coarsely ground
  • 1 package fresh ramen noodles
  • 2 Tbsp unsalted butter
  • 3/4 cup finely grated Parmesan
  • Garlic (optional)

Directions

  • Bring a large pot of lightly salted water to a boil
  • Cook the ramen about 2 minutes, until slightly under done
  • Reserve 1 cup of cooking water and drain
  • Melt the butter over medium heat
  • Add pepper and garlic (if using) and cook until fragrant, 30 – 60 seconds
  • Transfer the noodles to the pan along with 1/3 cup of the cooking water
  • Gradually sprinkle in the cheese while vigorously mixing the noodles with the tongs until the cheese, pasta water and butter form a glossy smooth sauce that clings to the noodles, about 1 minute
  • Add more pepper and salt to taste
