Coconut Macaroons

Ingredients

  • 2 cups sugar
  • 1/2 cup butter
  • 1 tsp vanilla
  • 1/2 cup milk
  • 1 cup coconut
  • 3 cups oatmeal
  • 6 Tbsp cocoa

Directions

  • Preheat the oven to 325° F
  • Mix oatmeal, cocoa, and coconut in a bowl
  • Melt butter and add milk, sugar, and vanilla
  • Bring to a rolling boil for 1 minute (30s / 60 count)
  • Pour over dry ingredients
  • Spoon the batter onto sheet pans lined with parchment paper
  • Bake for 25 to 30 minutes
  • Cool and serve
